Steak and Ribs in the Crockpot or Slow Cooker

Yes, you can make delicious steaks and ribs in your crockpot or slow cooker. Make the Son-In-Law Steak, Easy Swiss Steak, or Bistro-Style Short Ribs and prove it to yourself! Both are yummy and cook while you are at work or busy with other errands. Personally, I am a retired grandmother but I use my crockpot two or three times a week. Meal prep is so easy this way.

SON-IN-LAW STEAK

1 lb round steak, cut into 4 pieces
1 tablespoon Worcestershire sauce
1/2 tsp salt
1/2 tsp garlic powder
2 - 3 potatoes, sliced into 1/2-inch thick slices
1 celery stalk, sliced into 1/2-inch pieces
1 green bell pepper, diced
1 small can V-8 juice
1/2 cup water

Layer half the vegetables in the bottom of the crockpot or slow cooker.

Pour the Worcestershire sauce over the steak and rub in; layer half atop the potatoes.

Repeat layers.

Combine the V-8 juice, water, salt and garlic powder in a small bowl; pour over the layers.

Place lid on cooker and cook on low for approximately 8 hours until meat is tender.

EASY SWISS STEAK
2 lb boneless beef chuck eye roast
1/4 cup steak sauce
1 medium onion, sliced into thin rings
1 can (14 1/2-oz) diced tomatoes
2 tbsp all-purpose flour
1/4 cup water

Cut the roast into bite-size pieces and place in a crockpot or slow cooker. Add the steak sauce (I recommend A1 but use your choice) and stir to mix. Top with the onion slices; pour the undrained tomatoes over all. Place lid on cooker and cooker on low 9 to 10 hours or on high 4 to 5 hours.

Combine the flour and water together until smooth; stir into the beef mixture. Replace lid and cook about 5 more minutes until juices are thickened, stirring a couple of times.

Yield: 6 to 8 servings

BISTRO-STYLE SHORT RIBS
3 lbs beef short ribs
1 cup chopped onion
2 medium carrots, chopped
1 celery stalk, chopped
2 3/4 cups marinara sauce
1 3/4 cups beef stock

Cut the short ribs into individual rib pieces.

Spray a 12-inch nonstick skillet with nonstick cooking spray. Brown ribs on all sides.

Place the onion, carrots, and celery in the bottom of a 5-quart crockpot or slow cooker; top with the ribs. Blend the marinara sauce and the beef stock together; pour over the ribs and vegetables.

Place lid on cooker and cook on low 7 to 8 hours or until the ribs are fork tender. If cooking on high setting, cook for 3 1/2 to 4 hours.

Yield: 4 servings

Enjoy!
